you will be able to talk with people in ACII. In AC III you will have more fellow passengers but that class is crowded and you may not feel comfortable. AC I is quite luxurious where you will get a lot of 'privacy'
If you want to feel the environment of the places train is passing through, you should go with sleeper class(non-ac) but this class is crowded with so many beggars, vendors which are most of the times disturbing.

As per my understanding II A/c is the middle one and will prefer. Can I change the class during the journey? I will be purchasing a II A/c ticket and travel couple of hours in non A/C sleeper?

And one more thing. I did try to make an account in www.irctc.co.in inorder to purchase an online ticket. However, they are asking a mobile number which should be an Indian number. How do forigners buy online tickets?

no this is not possible, u can't change the class during a journey.
Regarding registration on IRCTC others may help

I want to travel from Chennai to Varanasi. Could you please let me know the easiest (shortest)path?
And I want to know;
Can we reserve
a ticket from Chennai to Bhopal in Chennai Rajdhani Train?
and can I get dow from Bhopal once it stop?

you will have to get down..its basically chain link created by our members,if you click the link you will see the buffer time available between each trains

Technically any direct train is the best train to take.... from Chennai (MAS) - Varanasi (BSB). Rest of all the Σchains look to take longer time as per the listing.
