DOJ: 20th February 2023.
Official Work Company ke kharche pe.
In E1 till Ajmer. Doors opened at 06:15 PM only. Till then I was at Platform #1 Railfanning.
Good Rush for this train, many of people are Daily Travelers getting reimbursed by their Companies. Around 19 Seats were empty in my Coach and one in E2, 14 of them got on the Spot Bookings

as per TTE. Benefits of checking Charts got myself placed in Seat#1 after talking to TTE, enjoyed the benefit of 2 Seats all the way till Ajmer 😂.
I'm.a 6ft Heavy Fellow and Seats are totally comfortable with great Leg Space
*Food*: Good Variety on Snacks served immediately after departure. Didn't feel like having a Kachori so only had packed Items.
Had both Chicken and Veg Dishes, except Chicken all dishes were like they were being prepared for Hospital. No masala or taste.
*Speed*: Immediate acceleration after clearing out switches in Palam. 130 KMPH after Rewari, smooth on Jaipur Ajmer Section but Rewari Jaipur section needs some serious work especially near Jhir, Rajgarh, Harsauli, Bawar etc. the whole coach vibrates badly and situation is worse for Shatabdi.
*Punctuality*: 130 MPS of no use as this Gets heavily regulated. Especially in NWR. Before time at Rewari Outer and Alwar Outer. Got delayed before regulation at Bandikui and reached Jaipur with 20 Minutes delay.
*Patronage*: One or two boarding in Alwar or Rewari, most movement there was passengers going out to buy stuff from Stalls or getting their eCatering Orders. Gandhinagar Jaipur gets good deboarding and 10-12 people boarded there for Ajmer as well. Many Jaipur localites use it to travel between Gandhinagar Jaipur to Jaipur Junction 😂. For a Vande Bharat Express, lot of on the spot Bookings. Seats may look empty but get full last minute. Lots of Daily Travelers. 19 People were remaining in both Executive coaches for Ajmer, counted them myself.

Personally, I think, food in premium trains [atleast in Executive class] should be regional instead of the regular fare everywhere. Southern trains should serve totally different meal options reflecting their cuisine in comparasion to other trains, for example. The HWH-RNC or HWH-PNBE VB should have fish options, I think. But, I don't think food arrangements are high on IR's list.

If this train gets extended to CDG, I assume it'll use a bypass line with only a stoppage at DEC then?

After extension, it'd follow the route taken by Chandigarh Bandra Express till Delhi Cantt. although chances of patronage would skyrocket with extra convenience if routed via New Delhi- reversal won't be an issue, in 5 minutes the entire halt can be done and dusted with.
As far as FOOD is concerned.....
Instead of going into specialities they've gone into Generally acceptable Food as much as possible. So that people with different needs find those acceptable enough that gave rise to another problem that we see today.

in 1A of many Rajdhani Trains it gets corrected to some extent as there's a dedicated Pantry Car for passengers traveling in 1A. So if someone wants continental or something different it could get arranged.
In Premium Day Time Intercities however it isn't available hence there's less differentiation between food of CC and EC (only difference being Corn Flakes, Fruits, Soup and Dry Fruits that can be arranged with ease).
Hence despite having similar fares 1A and EC are vastly different.
I too choose EC due to less rush, more comfort, more space and respect by Staff (they actually listen instead of treating Passengers as peasants in CC- I've actually heard how they talk to some of passengers with sarcastic tone and it's horrible). I have notified my office travel agent that I'd prefer taking eCatering for Lunch and Dinner rather than opting for train food - breakfast still is somewhat acceptable.

Agree:Agreed but it's distant dream
There are lot of possibilities to explore if one wants to in the catering department, public purchasing power has increased and it is willing to spend if some promise is shown to them but sadly no such intent or interest is being shown by rail authorities.
Experimenting with local cuisines and regional combinations would be too far fetched to expect when bare minimum necessity of hygiene is left unattended, complaints unaddressed. The era when some regular trains where known for their pantry car and even the 2a/3a food of premium trains was worth remembering, has long gone past by.

When cleanliness and hygiene are main concerns associated with food in the minds of Public, having plethora of options wouldn't help the cause.
There are actual videos of actual rats roaming all over food items at Itarsi Junction where food is loaded for Bengaluru Rajdhani, Rewa Vande Bharat and perhaps Indore Vande Bharat.
Getting varieties is a tried and tested method of failure as dependency on private players increases.

during initial days of introduction of New Delhi Varanasi Vande Bharat, at Prayagraj Junction Food from Pind Balluchi Restaurant was loaded. After initial days of appreciation it was mired with numerous complaints about Quality, Taste etc. leading to it's discontinuation.
Even getting private players involved into Pantry Cars of trains was tested and failed.
Railways indeed has a large scope for corruption.
Right now the best option is indeed eCatering.
