If Someone is Eggetarian but at the time of ticket booking He/She opted for Veg(Raj/Sha/Dur)..So my Question is "For Breakfast only(Omlet) NV Breakfast demand Kar skte?

Depends upon the caterer.
For most trains it can be done.
During my Bengaluru Rajdhani Journeys I used to have Veg Dinner on my first night (near Bengaluru) and Non Veg Dinner on my Second night (near Itarsi), even after opting for Vegetarian Catering. I even had Omelette many times. It just depends upon what you tell the caterer the first night in which he comes to take your preference for Breakfast.

In Normally all Rajdhani, Duronto and Shatabdi trains I never faced any problem regarding meal preferences.
I only faced problems when I wanted to change my preference just as the dish was being served. If you tell the caterer everything well in advance then it's all fine.

What about lunch...will they provide Egg curry instead of paneer?
Yes but you have to ask them first what options are available. Of Egg Curry is available then they will provide it to you if you tell them in advance.
I've done this numerous times as I don't trust the Chicken Sourcing of Indian Railways for Lunch/Dinner.

Mere time mumbai raj spcl raj and ak me jo aapko breakfast chaiye wo mil jayega veg or non veg. Veg me do option diye thy cutlet or upma. Dont know about dinner.mere co passenger ne non veg opt kiya tha but next day thursday tha to usne veg breakfast manga to usey change kar k de diya without asking any ques.
